After several visits to The Ternary over the years, there’s one thing we know. When they make a dish, it’s made with intention and truth. This winter you will find that attribute in their Penang Prawn curry. A multi-layered assault of pungency in salt, fish sauce, thick creamy coconut and peanut sweetness with eye watering fire the dish in its original form was designed yet beautiful streaming through the sauce in perfect waves.
If you’re scratching your head at the name, the restaurant draws its title from the Latin word ‘ternarius’ meaning three. It’s a nod to the three pillars of this flashy space – grill, wok and wine - tucked away in the Novotel Sydney on Darling Harbour. Attended for a function, where trays of betel leaves topped with flaked smoked salmon, salmon pearls and fried shallots fuelled our appetites. The stylish, open plan restaurant has two distinct kitchens, complete with great seating for solo diners (and anyone else who likes to have an intimate conversation with their chef). The Asian Kitchen trotted out curled Western Australian yabby tails on tomato gel with cucumber and apple, followed by kingfish sashimi, and tempura oysters with ponzu sauce. Stayed at Novotel Darling Harbour for a couple of nights during early Jan 2013, and we were quite impressed, glad we chose to do so, via a Travelzoo promotion.
