Located in Balmain's, White Bay, meet Mantecato, Risotteria Italiana
In the way of all good Italian families, Quattro Paste is growing yet staying true to its roots. The owners of this Balmain local (and also Balmains Rosso Pomodoro Pizzeria) would like to welcome twin brothers Paolo and Marco Orso as restaurant managers and co-owners.
The brothers, together with head chef Luca Bianchi, are about to bring an exciting new dining experience to the Quattro Paste location: Mantecato, Risotteria Italiana.
Mantecato is the name given to the final, vigorous whisking-in of butter an essential technique in making risotto. Quattro Paste patrons are already enamoured of Chef Lucas signature risotto, and at Mantecato this Italian favourite will become the house specialty. One of the secrets is in the rice itself: Italys finest carnaroli grains, Tenuta Castello Carnaroli, are imported by us directly from the Piedmont region.
The Orso brothers will also be able to indulge their shared passion for Italian wines, directly importing many boutique labels, some exclusive. Mantecato is an opportunity to bring the twins together again; Marco has just spent five years running restaurants in Milan, while Paolo is fresh from running the floor at Mosmanâ??s Ormeggio at The Spit.
