The bases are hand tossed, using high-protein flour, making a firm, strong dough, ideal for thin-crust pizza.
Head pizza chef, Simone Zullo, has recently arrived from Naples, where he is a member of the Associazione Verace Pizza Napoletane (True Neapolitan Pizza Association), which sets specific principles that must be followed for an authentic Neapolitan pizza.

Very disappointed with our experience here tonight. We ordered a pizza over the phone and went down after 10 minutes, as they advised it that's how long until it would be ready. Upon walking it, we were not at all acknowledged and waited awkwardly leaning over the counter. No one greeted us although they were well aware we were waiting as they walked around us as if they we avoiding speaking to us. We waited 10 minutes while they went around on the phone, continued cooking and talking to each other until I shouted at someone for the fourth time to say we were waiting for a pizza. They asked what kind and when we told them, they pulled it from the ring oven where it must have been the entire time we were waiting.
