Upstairs in one of the calmer wings of Knox City, you can find Bed Bath N Table, which, as the name suggests, is a linen shop with a more specialised range than the general department stores. While their stock is not always well-organised (or completely unpacked, particularly around Christmas time), the staff are down to earth, familiar with their wares, and not too busy to tend to customers' idiosyncratic requests. Recently, a cheerful sales assistant explained the difference between cotton and cotton-sateen to me; knowledge which is impossible to glean from simply staring at packets in other shops. She even opened a set of pillowslips so I could feel the difference. Prices reflect the quality of the products, so you can expect to pay more for high-thread-count linen, but overall, I was impressed with the absence of trendily overpriced gimmicks. I recommend Bed Bath N Table as a source of good quality linen and towels without the pretentious boutique vibe.
