Bills cafe in Surry Hills is renowned for serving one of Sydney's best breakfasts. The cafe doesn't accept bookings, but even on busy mornings its well worth the wait for the tasty ricotta pancakes, the moreish bircher muesli or the done to perfection traditional bacon and eggs. The mouth watering lunch and dinner menus include a range of contemporary pasta, meat and seafood dishes, such as seared scallops with turnip puree and saffron vinaigrette. The generous servings and consistent quality are sure to have you coming back for more.

Breakfast at Bill's. The coffees were good, babycino was great - lots of froth & dark choc buttons. Ordered the infamous ricotta hotcakes, charcoal toast with avocado, lime & chilli, scrambled eggs with extra avocado & dairy free bircher muesli. The ricotta hotcakes were fluffy & light & was a big dish although one of them wasn't cooked so the inside was like raw batter. In terms of taste, it was a bit too eggy for me but this was disguised when paired with the generous amounts of maple butter & maple syrup. You can definitely taste the ricotta though which is good although I'd still prefer a fluffy buttermilk pancake. The scrambled eggs were made well & was soft & fluffy. The side of avocado was $6.50 so a good thing it was a decent portion. Charcoal toast with avocado was tasty, clean & light with a very slight hint of chilli. This is a staple Australian breakfast and lunch place. Bills has several chains across Sydney and internationally. The food is classic western dishes like scrambled eggs, pancakes and for lunch, pasta, fish and chips etc. When I went I had the banana pancakes and they were nice, light and fluffy but honestly something I could easily make at home for cheap. The toppings which were cream, bananas and maple syrup was also very simple and the dish needed more moisture and flavour.
If you have not been to Bills you are totes missing out. Their pancakes are just oh my god too good to even have a decent conversation over brekky. In fact, all their breakfast menu is awesome like the eggs benny, I don't know what they put in the hollandaise sauce but it is so good. You just need to make sure you get there earlyish as it can get quite packed.
bills is so much more than a brunch place, but to be fair, that's what got this place the fame all those years ago.
You can't make a booking but that's not the end of the world.

He do it ? I think the cream he adds is the secret weapon.
The dinners and lunches are very sophisticated and so tasty, no it's not cheap but why should such quality be dirt cheap? They don't cut corners.
Highly recommended for brekkie lunch or dinner .
