Several years on and this place is as good as ever. I must say that the food court as a whole is a bit busier than it was, but it's still Manageable.
The chat Thai service has gotten quicker and they always have sticky rice now - they must have picked up their sticky rice game.

After almost two years since my last visit to this place, I finally came back to this restaurant this month. Nothing seems to have changed, with the layout and decor being the same and the shop still divided into two sections, one for the made-to-order dishes ordering, and another section for the quick hot food takeaway bar although you would still have to go to the same checkout counter to pay before you choose your quick hot food but you would have to line up from a separate line. It is a little confusing, I know.

I think that the food here is great for a lunch time Thai treat. Sometimes, the line is long, but in all fairness the staff are quick and unrelenting in their pace. Make sure you know what you want before lining up if you are going for a custom order.
The sticky rice is good - when they actually have it!
In a brave attempt to match high-quality Westfield Sydneys upper food court, The Galeries have upgraded the used-to-be-humble Chat Thai into a greater giant with still-high-quality food but with smaller serving sizes and higher price. As a result, the queues are now only occasional sightings in this shop.
