Itamae knives are specially crafted using 33 layers of High Chromium Damascus Stainless Steel VG-10 layered together. From sourcing the highest grade of Japanese stainless steel, to the final stages of hand honing the blades to achieve razor sharp edges.

They are razor sharp, corrosion resistant and perfectly balanced.

The handles used on Itamae knives are made from Micarta, a composite material of linen and resin, pressured together for ultra-durability. They are ergonomically designed to ensure the most comfortable and stable grip possible.

Each knife is carefully scrutinised throughout each stage of the manufacturing process so that only the highest quality knives carry the Itamae name.

Itamae Knives have been sold in Australia since 2010 with the first collection launching in specialty Kitchenware chain, Robins. The brand was acquired by Scope Sourcing Pty Ltd, and in mid 2014 was re-launched as an exclusively online brand. ...read more
