On occasion, a restaurants delivery of one's favourite dish is simply so flawless that one racks one's brains as to how the dining experience could conceivably be improved to earn said restaurant the superlative five-star rating. Kanji Sushi's execution (or rather, resurrection!) of the hallowed raw-salmon-and-avocado hand roll is one such occasion. And so far it has happened reliably on several occasions. Each time I order my staple meal of two such handrolls, they are made fresh and arrive promptly, neat, plump and perfect. Let's deconstruct the masterpiece. Salmon, of course, is the central star, with avocado in an Oscar-worthy supporting role. Rice offers structural integrity without dominating or diluting; the backdrop, if you will. Kanji Sushi's nori (seaweed) holds it all together with a unique, 'made-two-minutes-ago' crisp resistance - while skilfully avoiding brittlety or toughness.
