Drop into Lark if you have an hour or more to kill in Hobart, it's lovely. Try the whiskey tasting flight to sample their signature whiskeys and then get exploring further into the menu. Definitely recommend their delicious gin - try the gin and tonic they recommend with it, it's a little bit different and so so good.

Lark Distillery was the first licensed distillery in Tasmania since 1839. The gods were kind to me on my vacation to Hobart. While waiting for a bus, I turned around and low-and-behold there was the Lark Distillery! Felt like a kid that just found Willy Wonka's Chocolate Factory. Did the tour/tasting and really enjoyed myself. Great range of flavors - almost emptied my wallet on the spot (luckily my wife was able to curb my enthusiasm so I had enough money to fly home). The Bush Liqueur was an interesting surprise, ended up buying a bottle.
The Lark Cellar Door/Whiskey Bar on Hobart's waterfront is a great find. With a timber ceiling creating a warm atmosphere and views across to Constitution Dock in Hobart, this is a great place for meeting with friends - even those who aren't interested in the tastings. Go the hot chocolate would be my vote, while the other half of the Think Tasmania review team votes the Slainte Malt Whiskey Liqueur his favourite. More details and photos on the website. Cheers!
