Republic Hotel
Republic Hotel is a contemporary pub in Sydney’s CBD. Popular with business types, it offers all you would expect from an upbeat city establishment, and more. The main bar has beer, sports and entertainment, while the plush cocktail lounge caters to more intimate nights out. Bar food is served, but for more formal dining head upstairs to Republic Dining for sophisticated bistro fare with modern Australian and French influences.

I remember walking back from a night walk around the Opera House and discovered this place as I was walking up Pitt Street. The fact that it was a really narrow, and old, building immediately caught my attention (particularly since I like old buildings) so I stepped inside for a drink. It was pretty quiet, and I stayed downstairs and thought that it was nice, but nothing special. However when I came back recently, I decided to visit this pub again and discovered this awesome beer garden up on the roof. It was one of those experiences that told me that I should simply not remain in one bar but try to find out if there are better places to have my drink (such as on the roof – I love drinking on the roof). I'd probably come back here again the next time I'm in Sydney (especially since I do like the old building).
After their refurb we decided to see what all the hype was about and go and explore the Republic Hotel, specifically Taylor's Rooftop on the top level. The whole place is beautifully fitted-out on each floor and the rooftop is a great addition to the Sydney CBD. The issue was that everyone had the same idea and the charm of the place was lost when battling through the rude suits to try and get a drink. Shivelry is definitely dead here. Their cocktails jugs are tasty and good value. If you can go on a day that isn't busy it is a nice place to relax, if it is busy...turn back.
Stopped in here after looking for a quick and easy lunch. Noticed on the board that they had a $10 Chicken Schnitzel deal and thought to myself, "Thats perfect".
Friendly bar staff and very quick lunch service. The food was great and just as expected, great for lunch. Very pleased I walked in here. Thanks guys, keep up the good work!!!
The Republic is supposedly popular as a drinking corner for professionals who work nearby, but that was not the reason I went there. Apparently, this place had their burgers featured in Good Food Guide, and with that in mind I decided to give it a try.

I find this bar or pub a little too small for my liking.
What I do like is that the drinks are super super cold. It's like the glasses are chilled as well as the beer and soft drinks to produce the coldest drinks in Sydney.
