Situated right next door to the Tassal shop, it's easy to understand why their produce is so fresh. The whole rainbow trout on a bed of roasted potatoes is a work of art. The roasted salmon on pork belly gets top marks too. Easily, it's the best pork belly I've had at a restaurant. The serving sizes here are massive, so go easy on the house-baked bread. Service is efficient and friendly without any Sydney 'tude. Ten out of ten for the interior. I felt like I was having dinner on a MadMen set, albeit much more elegant. This modern, clean restaurant is situated in the Salamanca market district. Mains are around $30-$35 and features Tassal salmon, the pride of the town. I ordered some angel hair and seafood pasta... It was lightly flavored, with a seafood broth and light oil, tossed amongst freshly made angel hair pasta. The waiters were friendly and the ambience was nice.
After having having had it suggested to us, by the friendly efficient waitress, to choosing a progressive surprise dinner, we agreed. As we knew that Scott the chef, was the recipient of a major culinary award, we anticipated something special and we were not disappointed. Starters were, house special bread, with reduced olive oil. With a selection of warm olives. very tasty, then an appealing platter of four sample tasters, creative and excellent. Then as mains, (a) a roasted tassel salmon, orange, faro & fennel braise, caramelized pork belly, spring bay mussels, gremolata, skordalia, (b) a rolled back lamb saddleback, garlic mash, swede and apple purée, with mint and parsley salad, bacon jus. Again absolutely divine, cooked to perfection. Finishing with a very good three cheese board accompanied by nuts, sliced apple and sweet chutney.
