in most sushi places it's the same deal with their products that aren't cruelty free such as tuna, crab etc and then for alternatives bland unimaginative stuff like avocado or carrot.
this place completely turns the myth that ethical eating is boring on its head. superfood sushi is an inventive, creative smorgasbord of options with some of my favourites including the magic mushroom, mango chick, saigon pickle and black carrot. absolutely delicious (and healthy!) mini pieces of artwork. i'm so glad it exists, it's the sushi of a compassionate and sustainable future. will definitely be recommending to friends in sydney and coming back soon :)
