The Italian restaurant that has taken over the lobby of our symphony orchestra's Hindley St digs shows all the artistry you'd expect in such surrounds. Ingredients are always first rate, classic dishes are rendered with care and respect and there are enough twists and turns to keep things interesting if you're a regular. Start with the antipasto or the fried whitebait that is the equal of anywhere. Good quality pasta is deftly sauced and the amatriciana, with its melting braised pork, is a special treat. Veal dishes are also excellent, the meat young and sweet, whether in saltimbocca with prosciutto and sage, or perhaps with walnuts, porcini and broccolini. Dining at street level, whether in or out, is more casual, while the more formal service is at the upper level.
