The Highball Express
Named after the legendary booze-filled flights from America to Cuba during the prohibition era, The Highball Express is a dedicated rum bar with over 300 varieties lining the shelves. It’s very Latin in its layout with bright white space and lush greenery, and the cocktails are top notch. While you’re at it, try The Bootleg Punch, made with rum, bourbon, burnt orange and vanilla syrup, a dash of absinthe and lemon.

Hippo Co
Long-time readers will know much we love Hippo Co. Its cabin-esque fit-out, penchant for taxidermy and killer drinks list make it a quirky favourite amongst Canberra’s discerning drinkers, and it does an awesome rum cocktail called the Shore-Leave Rose. That’s Sailor Jerry’s, Lillet Blanc, lemon juice, Luxardo Maraschino, rose water, Peychaud’s Bitters and egg white. Delicious.

Digress Cocktail Bar
Digress’ mix of nightclub, cocktail bar, Indian tapas joint and state-of-the-art function space serves it very well indeed. It’s a big purple palace of fun, and it really does have something for everyone (whether you like shooting pool or attending Harry Potter-themed parties). This beautiful cocktail lounge is a place of whimsy, wonder and antique china, and the Lewis Carroll-inspired décor is deployed tastefully and quirkily. The cocktail to try is here the Tweedle-Rum, comprised of Gosling’s Black Seal, pineapple juice, lime, ginger beer, Angostura bitters, and a lovely vanilla/pomegranate syrup.
