Named after the legendary booze-filled flights from America to Cuba during the prohibition era, The Highball Express is a dedicated rum bar with over 300 varieties lining the shelves. It’s very Latin in its layout with bright white space and lush greenery, and the cocktails are top notch. While you’re at it, try The Bootleg Punch, made with rum, bourbon, burnt orange and vanilla syrup, a dash of absinthe and lemon.

Long-time readers will know much we love Hippo Co. Its cabin-esque fit-out, penchant for taxidermy and killer drinks list make it a quirky favourite amongst Canberra’s discerning drinkers, and it does an awesome rum cocktail called the Shore-Leave Rose. That’s Sailor Jerry’s, Lillet Blanc, lemon juice, Luxardo Maraschino, rose water, Peychaud’s Bitters and egg white. Delicious.
